The auto rattled through the bazaar, crying horns and bleating goats, cows broad and unbothered, witnessing our passage.

A chipped cup of chai rides with me, the leathery skin drifting on its surface this way and that with every jolt.

The driver grinning into the mirror, seeing the chaos as a kind of game, pressing ever harder on the throttle.

We are racing, not to any address I know, but to the very edge of October itself, where seasons change as suddenly as the sharp bend in the road ahead.

Living in India has given me a different way of seeing chai, masala chai, milk tea, whatever name you give it. It isn’t a recipe so much as an idea, and everyone carries their own version. For me, chai means something warm, milky, and spiced, with just a little sugar. For someone else, it might be milk and sugar with only the faintest breath of tea.

At NM Tea Co, we’ve mixed our own blend of tea and spices to get you started on your own “auto ride.” From there, you can jolt and jostle your way to any destination you like. Begin simply: simmer tea and spices in water with milk, and let it roll until it's the color you love.
