Recipe for fruit infused iced tea
Friday, September 3, 2010 at 7:00AM Hi All! My name is Ann, and I am your source for tea-related oddities. I've worked at NM Tea Co since the spring but took the summer off to get married. I'm learning from David how to brew each tea just right so that when the proper water temperature and time are used, each leaf's individual flavors and properties are maximized. Now I am excited to have enough command of 'the basics' of brewing to have a little fun!
Raspberry-Strawberry Simple Syrup
And now for the fun part... Cook up this wonderful simple syrup recipe.
- 2 Cups Granulated Sugar
- 2 Cups Fruit-Infused Water
- 1/2 Cup Fresh or Frozen Strawberries
- 1/2 Cup Fresh or Frozen Raspberries
Take the strawberries and raspberries and place them in a strainer. Put the strainer in a large bowl and fill with enough water to cover the berries. Set the bowl aside for at least a few hours, or overnight if possible. This will allow the berries to infuse the water.
Place 2 cups of the infused water (strained of any large bits of berry!) and 2 cups of sugar in a medium saucepan. Bring to a boil, stirring occasionally. Once the sugar is completely dissolved and the liquid is at a rolling boil, remove from heat and let cool.
Iced Tea
For this recipe I used Lady Londonderry Black Tea, but you can use any tea that you like. Almost everything is good iced. Once you pick your tea, brew up an iced version.
- Use 1 to 1.5 ounces of tea (3 to 5 tablespoons)
- 1 Gallon water
Bring half a gallon of water to a boil in a large sauce pan. Be sure to use the proper temperature water for the particular tea your brewing. If its a green tea use 160 degree water for instance.
Add in the tea and let it steep for the right time. 7 minutes for herbal, 5 for black, and 3 for green.
Strain the brewed tea into the other half gallon of cool water and refrigerate.
Once you have everything ready you can use the simple syrup to flavor and sweeten your iced teas for a complex and unique experience!
Tea Italian Soda/Iced Tea Soda
We have not settled on a name yet. Instead of making the syrup with fruit, use brewed tea. Then fill a glass with soda water (Pellegrino is my recommendation) and ice. Pour in the right amount of the tea syrup for taste. These are great fun to have as an activity at your next party or shower--email me if you're considering this and I'll tell you all the details, as I made them for my wedding shower!
